Banana Loaf

Ici au Canada j'adore manger des "Banana Loaf" au petit déjeuner ou au goûter. C'est un genre de cake à la banane. 
C'est tout simple et délicieux ! Le gâteau reste ultra moelleux pendant plusieurs jours ... mais de manière général on ne lui laisse pas le temps de se dessécher ;-)
On peut le déguster seul ou avec un peu de beurre ou de miel ... entre les deux mon coeur balance ... mais pas tant que ça : "Et tiens si je faisais un combo beurre + miel !?" Oups ... pour le moment je rentre encore dans mes jeans.
On peut aussi faire une version "Banana Loaf French Toast Style" c'est à dire faire du pain perdu à la banane ... Quelle décadence !

Here in Canada, I love to have Banana Loaf for breakfast or tea time. That's really simple and awesome ! The cake stay ultra smooth for several days ... actually most of the time we don't let it dry ;-)
We can savoured it with butter or honey ... I'm torn between both ... but ... "Why not a combo butter + honey !?" Ouch ... for the moment I can still wear my jeans.
We can also cook a version " Banana Loaf French Toast Style" !



Banana Loaf

Ingrédients ...

215 g de sucre en poudre
115 g de beurre mou
2 gros oeufs
3 bananes bien mûres !
1 c. à s. de lait
1 c. à c. de cannelle
240g de farine
1 c. à c. de levure chimique

1 c. à c. de bicarbonate de sodium
1 c. à c. de sel

... Préparation (environ 2 heures)

1. Préchauffer le four à 160 °C. Beurrer et chemiser le moule à cake.
2. Travailler le beurre pommade et le sucre. Ajouter les oeufs un par un et battre le mélange entre chaque.
3. Dans un bol, écraser les bananes avec une fourchette, ajouter le lait et la cannelle. Mélanger. 
4. Dans un autre bol mélanger les ingrédients secs : farine, levure, bicarbonate et sel.
5. Ajouter les bananes écrasées à la pâte, mélanger. Puis ajouter les ingrédients secs mélanger jusqu'à disparition de la farine.
6. Répartir la préparation dans le moule à cake et enfourner pour 1h à 1h10 de cuisson. Le banana lofa est cuit lorsque l'on peut ressortir la pointe d'un couteau sans traces de pâte.
7. Sortir du four, démouler et laisser refroidir.

Ingredients ...

1 cup (215 g) granulated sugar
8 tablespoons (1 stick or 115 g) unsalted butter, room temperature 
2 large eggs
3 ripe bananas
1 tablespoon milk
1 teaspoon ground
3 ripe bananas 1 tablespoon milk 1 teaspoon ground cinnamon
2 (240 g) cups all-purpose flour
1 teaspoon baking powder 1 teaspoon baking soda
1 teaspoon salt 


... Directions

1. 
Preheat the oven to 325 degrees F (160°C). Butter a loaf pan.
2. Cream the sugar and butter in a bowl. Add the eggs one at a time, beating well after each addition.

3. In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. 
4. In another bowl, mix together the flour, baking powder, baking soda and salt.
5. Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.
6. Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool down. Remove bread from pan.
Spread slices with honey or serve with ice cream
